why can't you mix the yolk from the inside of the shell of the eggs.

Hope this is what your asking.

To mix the yolk up inside the egg you need to have enough acceleration to smash the yolk up against the shell with a force sufficient to break the membrane the encloses the yolk even though the chalazae are trying to keep the yolk in the middle of the egg.
